Spicy Peanut Noodles


Yum. Yeah. Yum...DOUBLE yum.

I am a BIG fan of noodles. Big. Huge (No I am not currently referring to my weight...)

Anywho...I saw this recipe last week and I immediately checked my pantry to see what I had already and what I needed to go and get. Then I bundled myself and the Little Men up and we headed to the store. Yeah, I wanted it bad enough to brave the grocery store 7 1/2 months preggers with my boys in tow.

What can I say, when a pregnant woman wants a certain thing to eat, well she shall have it says I.

Made them and have them I did...when did I turn into Yoda??

Back to the noodles. These noodles are totally filling enough to have alone as your meal. You could also use restraint and portion control...two things I am lacking these days...and make it the side dish to your favorite Asian meal. I am pretty sure I just heaped a giant helping onto a plate and had a delightful delicious dinner of noddles.

Either way, I am pretty sure you will enjoy these noodles. I even had them the next day as leftovers, which is saying a lot since as some of you might know I have a snobby distaste for leftovers.

So do your noodle-lovin' self a favor and put these noodles on your next weeks recipes. You won't regret it!

Spicy Peanut Noodles
Smashed Peas and Carrots


Printable Recipe

3 tbsp peanut butter 
3 tbsp soy sauce
1 1/2 tbsp honey
3 cloves minced garlic
1 tsp ground ginger
2 tsp hot sauce
1/2 cup chicken broth
8 oz noodles (I used spaghetti)
Shaved carrot slices
Chopped Cilantro 
Crushed peanuts

Fill a medium saucepan with water for the noodles and add noodles once water is rapidly boiling.  Follow package directions as to how long to cook noodles.  In a small saucepan over medium heat, mix together the peanut butter, soy sauce honey, garlic, ginger, hot sauce, and chicken broth until peanut butter is melted and all ingredients are combined well.  Drain noodles and place them in a medium sized bowl.  Add in spicy peanut sauce and mix well.  Plate out noodles and add the carrots, cilantro and crushed peanuts.

There ya' have it. The only thing I did differently from the original recipe...um besides doubling it...did I mention I like noodles and that I am pregnant...was that I added cilantro in at the end. I really like the way the cilantro kicked it up a notch.  Also, just a side note...I don't think this dish was too spicy if any of y'all are questioning the "spicy" part of Spicy Peanut Noodles.

So in the wrap up...noodles good. Noodles super good. Go to the store. Make some noodles.

Try squeezing a squirt of fresh lime juice on top. Delicious! I have this recipe but add chicken and bean sprouts too, then it's all complete in one bowl.

Made these for lunch and they are AMAZING!! added some extra pb cause I like it really peanutie (is that a word?) but other than that perfect!

Made this for dinner and it was delicious! Added some chicken, diced red pepper, carrot shavings, and crushed cashews since we didn't have peanuts. Definitely a keeper!
