Chicken Noodle Soup

My favorite chicken noodle soup is Panera's low-fat chicken noodle. So I decided to go on an internet scavenger hunt to find a recipe. I found one and after some tweaking it was a bowl of just delightful Chicken Noodle Goodness...not exactly like my loverly Panera's, but close enough.

Chicken Noodle Soup

8 cups low fat chicken broth
1 large onion, diced
1/2 cup+ sliced celery
1/2 cup+ sliced carrot
3 cloves garlic, minced
3/4 tsp dried thyme
pepper to taste
2 large boneless chicken breasts, cut in 1/2" pieces
1 1/2 tablespoon fresh parsley, chopped
6 oz  of homemade style noodles (more or less depending on how noodle-riffic you want it)

In a pot combine stock, veggies and spices (except parsley). Bring to a boil and cook 7-10 minutes, until veggies are tender.

Add chicken and cook for another 10  minutes. Then stir in parsley.

While chicken is cooking, cook noodles as per package directions, drain and add to soup.

I have had the flu and that looks sooooo amazingly yummy. Now I just have to get someone to cook for me now that your sisters are gone.....
