Marinated Chicken with a Bread Upgrade

Simply de-light-ful, I tell you. This easy chicken marinade is made up of stuff you probably have on hand. It also tastes delish even if you only have 30 minutes to let it marinate. ALSO, once the chicken is grilled, it is great by itself, on pasta, on a salad, oh and for left overs the next day...which says a lot because I HATE next day chicken, it has a taste.

So go ahead whip this together to grill tonight. Super yums!

Grilled Marinated Chicken

2-3 chicken breast
1/3 cup oil
3 Tbs red wine vinegar (you could also use regular)
1 tea Italian seasoning
1 tea garlic powder
1/4 tea pepper
dash of salt

Mix all ingredients and then pour over chicken. Let marinate in the refrigerator for 30 minutes or more. Grill to cook.

To use it for the pasta dish in the picture above--

Cook favorite kind of pasta. Once done, drain reserving a scant amount of pasta water. Add pasta back into water. Pour in 1 Tbs of olive oil, grated parmesan cheese, fresh chopped Italian parsley, and salt and pepper to taste. Toss.

Pour out onto a plate and arranged slice chicken over it.

Serve with this little uprgrade of store bough bread...

Start with a loaf of bread from the store, the kind you have to put into the oven to brown.

Melt some butter. Brush over the top. Mix equal parts of Italian seasoning and garlic salt. Then add in some parmesan cheese. Sprinkle mixture over buttered bread. Put in the oven at recommended temperature for specified time.

Then slice it up and serve it along side your tasty chicken and pasta.

Happy Eating!
